This Week's Menu | November 11

Our Weekly Meal Plan (Whole30, Paleo)


Ya'll, my little sister's wedding is coming up super quick.  Good for her.  Bad for my weight loss goals.  LOL.  I've been intermittent fasting for the past few weeks and seen results.  Small results, but results nevertheless.  Wish me luck on getting to some classes at the YMCA at 5:15am for the next few weeks.  I'm NOT a morning person, but I don't see any other time that I could fit working out in.  Trying to fit in some keto meals along with the fasting.  Yikes!


Monday -  Crockpot 7-Spice Roast Sammies with Asparagus & Salad

Tuesday -  Leftovers

Wednesday - Scrambled Eggs with Cheesy Grits (with Cauliflower)

Thursday - Baked Fish w/ Mashed Potatoes and Greens

Friday - Thai Chicken and Butternut Soup

Saturday - Breakfast: Oatmeal

Lunch:  Sammies

Dinner:  Paleo Chicken Pot Pie with Kale Greens (or a Keto version like this or this)

Sunday - Lunch:  Sammies or Eggs

Dinner:  Leftovers

Farm-to-Table Menu | May 13

Our Weekly Meal Plan (Whole30, Paleo)


I'm so excited that our produce is starting to come in from hubby's farm!  He just brought home kale, beets, radishes, and lettuce!  So, all of our meal plans starting now and through the fall will be based on what produce is in season.  Farm fresh produce is so much more tasty than what I buy at the grocery store; I excited ya'll!


Monday - Out to eat (after soccer)

Tuesday - Oven Roasted BBQ Chicken and Kale Pasta Salad with Lettuce Salad (after soccer)

Wednesday - Burritos with Sauteed Veggies

Thursday - Chicken Bowtie Alfredo with Sauteed Beets

Friday - Homemade Pizza with Carrots and Salad

Saturday - Breakfast: High Protein Cottage Cheese Pancakes with fruit and bacon (making extra to freeze!)

Lunch: Sandwiches

Dinner: Leftovers

Sunday - Lunch: Southwest Chicken Salad

Dinner: Roast Sammies

Farm Fresh Meal Plan | July 30th

Our Weekly Meal Plan (Whole30, Paleo)


Last week, I used eggplant, tomatoes, and potatoes from hubby's farm in a few dishes as he has quite the eggplant production this year.  I also pickled some eggplant and made another batch of dill pickles using a recipe from Serious Eats.  (Love that site!)


Monday - Southwest Chicken Salad after Lincoln's final tee ball game of the season!

Tuesday - Paleo Stroganoff

Wednesday - Sheetpan Eggplant Parmesan with Pasta

Thursday - Eggplant and Scrambled Egg Hash

Friday - Flounder, Black Beans, Veggies,* and Bulgar

Saturday - Breakfast: High Protein Cottage Cheese Pancakes

Lunch: Sandwiches

Dinner: Leftovers

Sunday - Leftovers

Also, has anyone tried a meal service like Blue Apron or Hello Fresh?  I'm trying to evaluate if something like this would be helpful after the twins arrive or if a meal planning service like Paleo Plan would be better.  I'd love your thoughts!

Paleo Themed Weekly Menu 5/14

Our Weekly Meal Plan (Whole30, Paleo)

Well, we are back to Paleo eating around here.  There was a fun (not so much) foray into veganism and then to vegetarianism and then to whatever-goes-ism.  But Paleo works for us.  I'm not here to give some amazing testimonial about my health or anything; we just want to feed our children more fruits and veggies and avoid so many processed carbs.  Cereal and pasta are the things I miss most, so you'll see them pop up around here every once in awhile.  Honestly, my goal is to be 80% Paleo.  A little yogurt, no problem.  A few black beans, cool.

But seriously, I need a better Paleo pizza crust recipe.  I've tried cauliflower crust and sweet potato crust, but they just don't cut it.


Meatless Monday - 

Dinner: Fresh Corn and Zucchini Chowder (Yes, this was on the menu last week, but I didn't even get to taste it because we were out.  The kids and my MIL had it, and it must have been good because there were no leftovers!)

Taco Tuesday -

Dinner: Couscous Salad with ??? (We usually have cheese quesadillas, but I'm looking for something healthier to add in here.  Hmmm....)

Witalian Wednesday -

Dinner:  Rosemary Chicken, Bacon, & Avocado Salad

Fish Fursday -

Dinner: Japanese style dinner with flounder, beans, bulgar, and veggies

Pizza Friday -

Dinner:  Homemade Pizza!

Saturday Scramble - Breakfast: Banana Almond Chia Pudding with Bacon

Lunch:  Sandwiches and Salads

Dinner:  Saturday Scramble (i.e. make something with the leftovers)

Sunday Roastday - Lunch:  Leftovers

Dinner:  No Bun Burgers!  Yum!

I'm getting excited to start incorporating our garden produce into the menu!  Especially dinosaur kale; it's my favorite!

This week I'm also starting Money Saving Mom, Crystal Paine's Make Over Your Evenings course.  I keep thinking about how often my evenings are completely unproductive, and I have high hopes that this course will inspire me.  I would love it if you would  join me on this adventure!  My plan is to blog about my progress.  (I think this itself would be progress, actually!)

Last week, we tried this crockpot recipe for Sticky Chicken with some drumsticks I found on sale at Aldi.  It was delicious!  Definitely a keeper!  The sausage soup was also quite good, but we weren't fans of the acorn squash soup.  I'll have to find another use for acorn squash.

I bought an acorn squash at Aldi last week for $.99, but I've never used acorn squash before.  So, I used trusty Google and Pinterest to find a Whole30 recipe for it.  I ended up trying to decide between a fall soup from Paleo Leap and roasted acorn squash from Nom Nom Paleo.  I love both website, but it's raining today, so I went with the soup.  Can't wait to try it out!
